1. Mix together tamarind pulp and water, in a large bowl. Using
your hand, squeeze the
pulp to allow the water to mix and create a thick sour liquid
of tamarind pulp juice.
Strain this liquid
through a sieve and bring it to the boil to kill all impurities.
Boil for
about 10 minutes and strain this liquid through a fine mesh
strainer and reserve for
later use.
2. Make sugar syrup by boiling together water and sugar until
all the sugar has melted.
Cool and keep the
syrup aside for later use.
3. To make sherbet, mix together tamarind juice, sugar syrup
and cold water and place
this mix in an ice cream machine and churn until the liquid
turns to ice.
