As said before, the oldest recipes for Thai desserts revolve around the coconut and incorporate dumplings or certain fruits, which are then floated in coconut milk. With the introduction of foreign influences to the royal palace, eggs were brought into the mix, creating an entirely new class of Thai desserts.

The following recipes range from the traditional: boiled bananas in coconut milk (called “bananas being ordained as nuns” for their white, milk-clad appearance), to egg custards cooked in an earthen pot.
