น้ำพริกอ่องเครื่องปรุง

พริกแห้งบางช้าง หั่นเป็นท่อน เอาเมล็ดออกแช่น้ำ 3 เม็ด
หอมแดง 2 หัว
กระเทียมกลีบเล็ก 4 กลีบ
ข่า 2 แว่น
รากผักชี 2 ราก
กะปิปิ้งไฟ หรือถั่วเน่า 1 ช้อนโต๊ะ
หมูสับ 250 กรัม
มะเขือเทศลูกใหญ่ 3-4 ลูก
น้ำมันพืช 2 ช้อนโต๊ะ
กระเทียมสับ 1 ช้อนโต๊ะ
น้ำซุป 1 ถ้วย
น้ำปลา 3 ช้อนโต๊ะ
ผักชีซอย 1/4 ถ้วยตวง
ต้นหอมซอย 1/4 ถ้วยตวง

**ผักแกล้ม : แตงล้าน กะหล่ำปลี ผักกาดขาว ผักชีฝรั่ง สะระแหน่ ผักไผ่ ถั่วฝักยาว**เครื่องเคียง : ข้าวเหนียว แคบหมูวิธีทำ1โขลกพริกแห้ง หอมแดง กระเทียม ข่า รากผักชี กะปิหรือถั่วเน่ารวมกันให้ละเอียด2นำหมูสับลงไปย้ำกับครกให้เข้ากับเครื่องแกงน้ำพริกที่โขลกไว้ นำมะเขือเทศที่หั่นเป็นชิ้นเล็ก ๆ ใส่ลง ในครกแล้วย้ำให้เข้ากัน แต่อย่าให้ละเอียด3นำกระทะตั้งไฟ ใส่น้ำมันลงไป พอร้อนใส่กระเทียมสับที่เหลือลงไป ผัดให้หอม นำเครื่องที่โขลกกับหมูไว้ ลงผัดให้ทั่ว ใส่น้ำซุปลงไปผัดด้วยไฟอ่อน ปรุงรสด้วยน้ำปลา แล้วเคี่ยวจนกระทั่งมะเขือเทศเปื่อย4ตักใส่ถ้วย โรยหน้าด้วยผักชี ต้นหอม เสิร์ฟพร้อมกับผักสด และแคบหมู สำหรับ 4 ท่าน Nam Prik Ong, Spicy Ground Pork DipIngredients

Dry Red Chilli pepper, seeded, cut into 1 inch lengths soaked in water 3 pieces
Thai shallots 2 heads
Thai Garlic, peeled 4 cloves
Fresh Galangal 2 slices
Cilantro/coriander roots 2 each
Ground Pork 250 grams
Shrimp paste roasted or dry fermented soybean cakes 11 tbsp
Plum tomatoes, coarsely chopped 3-4 each
Vegetable Oil 2 tbsp
Chopped garlic 1 tbsp
Water or stock 1 cup
Fish sauce as needed
Green Onion, chopped as needed
Cilantro, chopped as needed

Make a chili paste by pounding together the dry red chili peppers, thai shallots, thai garlic, galangal, cilantro roots and the dry fermented soybean cakes.
Once a paste in achieved add the ground pork to the pestle and mortar and pound to mix the paste into the ground pork.
When the paste is mixed well into the ground Pork, add the chopped tomato andpound lightly into the mixture to in corporate.
Put a wok on the stove and heat up vegetable oil. When hot add the chopped garlic and saute until fragrant. Add the ground pork mixture to the wok and stir to cook over high heat.
When the pork is almost cooked add the water and bring to boil, cook over medium low heat, to allow the flavors to come out and liquid to evaporate.
Season with fish sauce, the dip should be like a thick spaghetti sauce.
Once the tomato pieces are allowed to disintegrate into the sauce and fish sauce is used to correct seasoning, spoon this dip into a bowl and sprinkled with chopped cilantro and green onions.
Serve this dip with accompanying vegetables. This dip should be eaten with sticky rice and crispy pork rind.
