Thai Taro Custard
6 each Eggs, whole
¾ cup Palm Sugar
2 cups Coconut milk
11/2 cups Cooked taro meat, mashed
1 cup Oil from frying shallots
½ cup Crispy fried shallots
Heat oven up to 350 F.
Mix the egg, coconut milk and palm sugar together and strain through a fine sive into another mixing bowl.
Mix in the taro meat to the coconut milk mixture until smooth.Allow to rest while frying the shallots.
Leave one cup of shallot oil in the pan and heat it up.When hot add the custard mixture to the hot fragrant oil and stir until to have a thick paste.In fact this custard is cooked.
Turn the custard paste into oiled baking pan and bake in the oven with heat from above until golden and sprinkle the top with fried shallots.Allow to set before cutting to serve.
