2 cups. Poached seafood. Shrimp, Calamari and Mussels
¼ cup Onion, peeled and sliced
½ cup Celery or Chinese celery, sliced thin
¼ cup Lemongrass, sliced thin
2 Tbsp Kaffir Lime leaves, chiffonade
½ cup Shallots, peeled and thinly sliced
¼ cup Roasted peanuts.
6 each Fresh Thai chili peppers, finely chopped
1/3 cup Fish sauce
1/3 cup Lime juice
1 Tbsp. Palm Sugar
2 Tsp. Thai Chili paste (optional)
There are two ways of making this salad.
Mix all the ingredients together in a mixing bowl and make the dressing in another bowl.Then after tasting the dressing to the desired hotness and taste, add the dressing to the seafood salad ingredients and toss well.Served immediately.
The second way of making the dressing requires that you cook the seafood in a small amount of water and lime juice.Once the seafood is done but not over cooked, take sauce pan off heat.
Add the dressing ingredients, including the chili paste. Taste to check the correct taste. It should be sour, sweet, salty and spicy.
Then add the rest of the ingredients to the sauce pan and toss to mix well.
